Can oils come in powdered form- like krusteaz pancake mix- the ingredients list oil, but the mix is dry?

- No. Somehow the oil has been added to the dry ingredients and dehydrated, I assume.
- Yes!!! I don't know what krusteaz mix is but it sounds like its a dry mix and the ingredient line says something about oil. Actually what they do is spray dry oil with a carrier like cornstarch. Spray drying is a process where a liquid carrier with a dissolved solid is atomized in a large chamber with countercurrent warm air flowing over it. So they dissolve the cornstarch in water and mix it with the oil then spray it into warm air. The water evaporates and you get very small particles of cornstarch with oil absorbed on them. They don't have a very long shelf life because of the large surface area involved so use up the pancake mix. Good Luck PhD Food Chemistry and Nutrition
