- There are food science and food microbiology books available which address this topic in specific chapters but I don't know if there are any whole books about it. I know Rosemary has some antibacterial properties and hops acid are very effective, also some bacteria produce chemicals which are very effective. I just don't think anyone has pulled it all together. PhD Food Chemistry and Nutrition
