How to use Safari 4? Top sites? Help!?

I just downloaded safari 4 and am confused about the top sites. can i set it so that the top sites stay the same no matter if I visit another site (not on the list) more? because this one site I always go on but dont want on my top keeps coming on there. i press X and it comes on again. how can I get this off permanently? thanks!
