How to remove contacts from chat list display?

I have hundreds of people in my contacts, but I don't want them all to display in my chat list - how do I remove all the people I don't want to display? There is a "Show this contact in my online list" in the edit contact field, but it doesn't seem to do anything is someone has a Yahoo email account - it shows regardless. Help!
